Greek Honey Cake
3/4 Cup Butter
3/4 Cup Sugar
3 Eggs
1 Cup AP Flour
1 1/2 teaspoon Baking Powder
1/4 teaspoon Kosher Salt
1/2 teaspoon Ground Cinnamon
2 teaspoons Orange Zest
1/4 Cup Milk
1 Cup Walnuts, chopped
1 Cup Sugar
1 Cup Honey
3/4 Cup Water
1 teaspoon Lemon Juice
In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well between each addition. Meanwhile, in another bowl, combine the flour, baking powder, salt, cinnamon, and orange zest. Alternate adding the flour mix and the milk to the creamed butter mix. Once combined, fold in the walnuts. Pour batter into a prepared 9 inch baking dish and bake at 350 degrees for 35-40 minutes. While the cake is baking, in a medium saucepan, combine the sugar, honey, water, and lemon juice and bring it to a boil. Cook for 3-4 minutes and keep warm. Once the cake is baked, puncture holes in the cake using a toothpick and pour the honey glaze over the cake. Let the cake stand for at least 20 minutes before serving.
