Brazilian Cheese Bread (Pao de Queijo)

I'm sure most of you have been to one of the many Brazilian Churrasco restaurants around town. You know those yummy cheesy bread puffs that you practically fill up on waiting for you meat of choice to come by? I found the best recipe for them!!! They were perfect. Brazilian Cheese Bread

1/3 Cup Light Olive Oil
2/3 Cup Milk
1 Egg
1 1/2 Cups Tapioca Flour
1 teaspoon Roasted Garlic Powder
1/3 Cup Queso Fresco
1/4 Cup Colby Jack Cheese, shredded
1 teaspoon Salt

Place all the ingredients into a food processor or blender and combine until smooth. Meanwhile, generously oil mini muffin tins and preheat your oven to 400 degrees. Spoon the batter into the tins until just full. Bake for 15-20 minutes or until golden brown and puffed.
