Brazilian Cheese Bread (Pao de Queijo)

I'm sure most of you have been to one of the many Brazilian Churrasco restaurants around town. You know those yummy cheesy bread puffs that you practically fill up on waiting for you meat of choice to come by? I found the best recipe for them!!! They were perfect. Brazilian Cheese Bread

1/3 Cup Light Olive Oil
2/3 Cup Milk
1 Egg
1 1/2 Cups Tapioca Flour
1 teaspoon Roasted Garlic Powder
1/3 Cup Queso Fresco
1/4 Cup Colby Jack Cheese, shredded
1 teaspoon Salt

Place all the ingredients into a food processor or blender and combine until smooth. Meanwhile, generously oil mini muffin tins and preheat your oven to 400 degrees. Spoon the batter into the tins until just full. Bake for 15-20 minutes or until golden brown and puffed. 

I'm telling you, if you love these babies at the Brazilian joint, you're going to have these gone in minutes! Enjoy!

Greek Honey Cake

Honey...The nectar of the gods bees. Quicker and easier than Baklava but just as delicious, this Honey Cake is awesome. My Banana, my eldest child, doesn't love honey and still enjoyed this cake. And Peanut Butter, my youngest, has decided she doesn't like nuts. She ate two pieces. It could have a lot to do with the fact that she's four and cake is the world to her. I think it's truly delicious. Moist and nutty. Yum!



Greek Honey Cake

3/4 Cup Butter
3/4 Cup Sugar
3 Eggs
1 Cup AP Flour
1 1/2 teaspoon Baking Powder
1/4 teaspoon Kosher Salt
1/2 teaspoon Ground Cinnamon
2 teaspoons Orange Zest
1/4 Cup Milk
1 Cup Walnuts, chopped
1 Cup Sugar
1 Cup Honey
3/4 Cup Water
1 teaspoon Lemon Juice

In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well between each addition. Meanwhile, in another bowl, combine the flour, baking powder, salt, cinnamon, and orange zest. Alternate adding the flour mix and the milk to the creamed butter mix. Once combined, fold in the walnuts. Pour batter into a prepared 9 inch baking dish and bake at 350 degrees for 35-40 minutes. While the cake is baking, in a medium saucepan, combine the sugar, honey, water, and lemon juice and bring it to a boil. Cook for 3-4 minutes and keep warm. Once the cake is baked, puncture holes in the cake using a toothpick and pour the honey glaze over the cake. Let the cake stand for at least 20 minutes before serving.
